Origin: Côtes de Provence wines were made for the first time in 1895 and entered within the exclusive Appellations of Origin in 1977. Saint Adrien Côtes de Provence is made from the best selection of plots within the Provence vineyard known for their good maturity and their low production to confer specific aromas and flavors to this wine. These plots amidst the garrigue and rocked by a mixture of sun and mistral.The proximity of the sea, the sunshine and the granitic and schistose specific soil, combined with professional winemakers, allow the development of a great rosé wine. Vinification process: The vineyard is located on a rocky and sandy soil from the breakdown of the underlying mica schist. The stream and lake create an exceptional microclimate for vine growth. The cold and dry winter as well as the hot summer provide excellent maturity. During vinification, the absolute control of temperatures allows the extraction of a pinkish color. From bleeding or pressed directly (depending on the variety and the vintage), the grapes undergo a maceration and static settling. The extraction of flavors is by stalling cold. The stainless steel vats are equipped with a temperature control very specific, necessary for obtaining qualitative rosé. Tasting Notes: -Pale salmon-pink ; -The nose is aromatic and powerful with peach and spicy notes ; -Great fulness and freshness in the mouth - A well structured wine, rich on the palate, very harmonious and supple in mouth. Wine and Food: Ideal in many occasions: as an aperitif, or for a meal served with Mediterranean-style cuisine.
