Doudet Naudin Chablis 1er Cru Montmains
Since 1933, our Estate is located on 5 villages from Beaune to the hill of Corton and covers nearly 15 Hectares with some old vines aged from 50 to 70 years and more.
Yields are controlled through a voluntary severe size. The Domaine is cultivated with the rule of “Lutte Raisonnée” and the treatments (organics without pesticides) are reduced to a minimum. We do a light plugging with the preoccupation of safeguarding of the general balances of the vines and the ecosystem. Sometimes we do a small “green harvest” at the end of July only if nature requires. The necessary manual grape harvest is transported in small bored cases. After a strict selection on a selection table (pinot noir and chardonnay) a de stemming (total or not) is done.
The fermentation on the skins will be rather long if the Vintage allows it. The wine-making does not look over-extraction. Temperatures are controlled and the use of pneumatic press allows a respect of each original parcel without constraint of volume: A guarantee of authenticity. Our care seeks to obtain the optimal fruit according to its soil and the character of each vintage. Red and white wines age in oak barrels from France only (20 to 25% new oak) for a period varying From 9 to 18 months according to each vine and vintage.
Montmains is one of Chablis fine Premier Cru vineyards. As a “First Growth” it must maintain its quality and meet a minimum alcohol content each year. This wine has extremely ripe fruit and rich, full-body and texture. A wine of great stature for any lover of fine Chablis.
Again most great White Burgundy has always defied the usual ‘Chardonnay’ label that’s usually applied to bland supermarket whites (oaked / unoaked). It really is Chardonnay, but because of the subsoils (limestone) and microclimates only found in Burgundy it takes on a delicacy and depth not really found to the same degree elsewhere.
